El Caldero is a wonderful restaurant in Madrid that’s been open now for 40 years. While the food El Caldero serves includes everything from stuffed baby squid to stewed veal shank, grilled mullet in tomato sauce to beef loin with roast potatoes, one of the things El Caldero is known for is making the best paella in Madrid.
Not surprising really as the seafood they use in their paella is incredibly fresh (it was literally swimming yesterday), the rice is perfectly cooked and, as a pan of paella is plenty of food for two people, it’s a relatively inexpensive lunch or dinner.
